Omelettes

I love omelettes because they have a very good time -> tastiness ratio.

I have them often for lunch.

Fillings I’ve tried (all with cheese)

Fried Mushrooms & Onions

Pretty standard. Normally my go-to.

Fried Aubergine

Kind of soggy, and don’t taste of much on their own so not worth it.

Fried Potato Cubes

Very nice and filling, but takes too long because have to boil first. Maybe I should try cutting even smaller and going straight to frying.

Par-boiled Green Beans

Chop up nice and small, add to boiling water, wait 2 mins then drain and run under cold water. Pretty good, I like the crunch they add. I should probably do this more actually

Fried Butternut Squash

Yeah don’t do that.

Things I’ve added to the egg mix

Paprika

Can be good, but hard to find the balance between too little and too much.

Nando’s Hot Sauce

Actually amazing. Makes the omelette brown way better, and also makes it fluffier for some reason?

Lemon Juice

Acidity reacts with eggs to form carbon dioxide and make a fluffier omelette! Was pretty surprised the first time. Got to be careful not to add too much or it becomes impossible to fold without breaking.
